Quick and Easy Peanut Butter Cookies


This is one of our favorite peanut butter cookie recipes. It's crumbly and sweet, and oh-so peanut-buttery! It's also very simple, with only 4 ingredients.

Quick and Easy Peanut Butter Cookies
1 cup peanut butter (we've used both creamy and chunky, with good results either way)
1 cup sugar
1 egg
1 tsp. vanilla

Blend all ingredients together in bowl. Drop by teaspoonfuls onto greased baking sheet. Bake at 350 degrees for 10 minutes. Remove to wire racks to cool.

Yield: approximately 2 dozen.


Changes we've made: Sometimes we add chocolate chips to the dough, or sprinkle them on top (as pictured). This time, Jeff also sprinkled the cookies with sugar and flattened them with a fork. We like the fork-flattened look.
